This may or may not count as part of my Chinese food kick that I mentioned on Monday. Yeah, the recipe name says “Cuban,” but apparently Cuban-Chinese food is a thing, hence the “fried” part of the dish, which was originally fried rice from this recipe. But then I went and changed it to fried quinoa, which I don’t think is authentic to Chinese or Cuban cuisine. That’s okay though. If the Chinese think they can go and mess with Cuban food, I’ll go right on ahead and do the same.
Aside from the fried rice in the original inspiration for this dish, there isn’t a whole lot Chinese about it. Smoky tempeh, pineapple, black beans and jalapeno peppers all scream “Cuban” to me.
